This is the perfect easy recipe that you can just throw on a sheet pan and still have such a delicious meal! The balsamic dressing with the sausage, chickpeas, and veggies is just so perfect and tasty for fall (it is also great for blood sugar!)
You can use any seasonal vegetables you’d like, I’ve been into trying different types of squash recently, and you can even buy them pre-cut to make this quicker

Chicken sausage: I prefer to purchase ones without additives or added sugar. I always look for pasture-raised because it contains 50% more vitamin A, three times the amount of omega-3s, and letting animals graze and roam is great for the environment! Chickpeas: Rich in fiber, minerals, and protein to satiate you and support digestion
Onion: Rich in vitamin C, which supports collagen production, immune health, and iron absorption. Contains quercetin, an antioxidant that has anti-inflammatory effects
Broccoli: Rich in fiber, antioxidants, vitamin K, and choline to reduce inflammation, improve digestion, and support bone health

Seasonal Balsamic Sheet Pan Meal
We all love a minimal clean-up meal and this nutritious balsamic chicken sausage and chickpea meal is baked roasted all on one sheet pan!

Instructions

Preheat oven to 400 degrees Fahrenheit

Prepare a sheet pan and add squash and drizzle oil or avocado oil on top

Roast for 20 minutes

Remove from oven and add broccoli, sausage, chickpeas, onion. Season with salt and pepper

Roast for another 20 minutes

Whisk dressing together

Remove from oven and let cool for 5-10 minutes

Pour dressing all over and serve!
