Pomegranate and eggs?! Seriously so good! This recipe wowed me because I was so impressed with the flavor combination, and the olive mix is the cherry on top.

This recipe comes together easily, but looks like it would be more of a fancy meal. Highly recommend giving this a try, especially if you love Mediterranean food!

Ingredients and Benefits:

Extra-virgin olive oil: Rich in monounsaturated fats, polyphenols, and antioxidants to reduce inflammation

Ingredients

Instructions

  1. In a pan over medium heat, add oil and spices. Mix and cook for a minute
  2. Add garlic, cook another minute
  3. Add olives and salt, cook for a minute. Then pour in a small bowl
  4. Add pomegranate seeds into the same pan, cook for 3 minutes
  5. Make 2 openings, place crumbled feta on the rim of the openings. Use extra to place spread on pomegranate seeds or on eggs
  6. Crack eggs into openings
  7. Cover and cook for 4 minutes, more or less depending on how done you like them
  8. Remove from heat and top with olive mixture
  9. Enjoy the pop of flavor!
