Herby Chicken White Bean Soup

There is so much goodness in this soup that I honestly have no idea what to call it-definitely a fridge dump for me that turned out so delicious.

This is exactly what your body and soul needs when feeling under the weather, and is also great to prep to have something nourishing and satiating on hand.

Ingredients and Benefits:

Onion: Rich in flavonoids, especially quercetin that works to improve blood pressure, metabolism, and heart health

Garlic: Has antibiotic and anti-inflammatory properties. Tip: let garlic sit out for 10-15 minutes after mincing so the enzyme allicin is activated and the benefits are retained!

Ginger: Great for gut health, anti-inflammatory, and may have neuroprotective benefits

Fennel: Contains anethole, which is anti-inflammatory and aids in digestion by reducing bloating. Is also rich in vitamin C, quercetin, and potassium

Rainbow carrots: Different colors contain different phytonutrients such as anthocyanins for heart health, xanthophylls for eye health, and lycopene for cancer fighting properties

Celery: Rich in fiber, flavonoids, vitamin K, and water for free radical reduction and bone health

Jalapeño: Contains capsaicin, an antioxidant that can help increase metabolism and maintain a healthy immune system

Ingredients

Instructions

  1. in a large pot over medium heat*, add onion and sauté for 1 minute
  2. -add garlic and ginger, sauté for 2 minutes
  3. -add rest of veggies and cook down for 5 minutes
  4. -add in cooked shredded chicken, beans, broth and bring to a boil
  5. -reduce and simmer with lid on for 15 minutes
  6. -stir in your herbs and let simmer 10 minutes
  7. -serve in a cozy bowl and top with lemon juice if you’d like🍋
