Gut-Healthy Homemade Marshmallows

These refined sugar free homemade marshmallows contain simple ingredients that support your body. You will never want a store-bought marshmallow again!

You will be obsessed with these marshmallows! Everyone that I have made these for agree that they are way better than store-bought, and of course they are so much better for you.

This recipe does not require any baking, but need to set on the counter overnight. It is important to let them dry out for around 2 days if you want to roast them! If they are too “wet” they will not hold as well.

Ingredients and Benefits:

Grass-fed gelatin: Rich in collagen, aminos acids, and can help improve digestion. It is important to purchase grass-fed for the maximum benefits and nutritional profile. I purchase mine from Thrive Market.

Honey: I use a mixture of honey and maple syrup for a neutral taste, but using either one is tasty! Both are an unrefined sugar that retains more nutrients.

Tapioca starch: Used to dry out the marshmallows. I use tapioca starch because it is lower in FODMAPS.

Healthier homemade grass-fed gelatin marshmallows the everyone will be obsessed with!

Ingredients

Instructions

  1. In a large bowl, add the gelatin and pour 1/2 cup water evenly over to bloom. Set aside.
  2. Over medium heat, add rest of water and honey to a medium pot and bring to a boil for 7-10 minutes. Stir frequently to avoid burning.
  3. While the sugar/water is boiling, prepare 8x8 pan by coating the bottom with tapioca starch.
  4. Set up electric hand beaters or stand mixer.
  5. Slowly pour the sugar/water mixture into large bowl with bloomed gelatin while the beaters are on low.
  6. Increase speed and add optional vanilla.
  7. Beat for 8 minutes, until white and fluffy.
  8. Quickly pour into prepared pan and coat top with more starch.
  9. Let set for at least 4 hours, preferably overnight.

Note

If you want to roast these, let sit for 2 days and toss with tapioca in between days!
