You will love how simple this cake is! It has to be the easier dessert I’ve ever made, yet it is so tender, moist, and just so delicious.
Ingredients and Benefits:
Lemon juice: Gives a fresh flavor
Olive oil: Rich in healthy fats and polyphenols to support skin health and balance blood sugar. It gives a complex flavor that pairs well with the figs
Honey: Contains antioxidants and antimicrobial properties. It is an unrefined source of sugar and gives a light and floral taste.
Eggs: I use pasture-raised eggs for 2-3 times the omega-3s, more vitamins, and sustainability. They give the cake lift.
Almond extract: Adds depth and a lovely flavor, feel free to omit
Almond flour: Contains healthy fats, vitamins, and fiber to help digestion and reduce the glycemic load.
Baking powder: Helps rise and fluffy texture
Figs: Rich in fiber, antioxidants, and minerals that promote digestion and heart health. I used fresh, but figs can be hard to find so if you have dry, then soak them in hot water. Make sure they don’t have any added sugar though!

Preheat oven to 350 degrees Fahrenheit and prepare 8x8 cake pan

Add lemon juice, honey, oil , eggs, and extract to a small bowl and whisk

Add in the flour, baking powder, and salt. Fold.
