We all love a good salad with texture and even better one that is seasonal and a bit festive, so definitely make this recipe! It is hearty enough to be a meal of it’s own and tastes even better as it marinades.

The textures are just so perfect. The pomegranate is so juicy, the pumpkin seeds are crunchy, and I think lentils are so good as well and they add a subtle spice, so this is incredible

Ingredients and Benefits:

Beets: Rich in nitric oxide to increase blood flow, folate to keep cells healthy, and fiber for a healthy digestive system

Pomegranate seeds: Rich in polyphenols, antioxidants, and vitamin C for reduced inflammation, skin, and immune health

Red onion: Rich in antioxidants, anthocyanins, fiber, vitamins, and quercetin for heart health, metabolism benefits, and anti-inflammatory effects

Lentils: Rich in fiber, protein, vitamins, iron, and are a slow-burning source of energy. I also use sprouted here

Pumpkin seeds: Rich in magnesium, tryptophan, and zinc. These contribute to healthy sleep, bones, and fertility

Parsley: Rich in antioxidants and vitamins for skin health and serves as a natural diuretic

Balsamic vinegar: Contains acetic acid that has a probiotic strain to aid in digestion. It is also good for regulating blood sugar

Extra-virgin olive oil: Rich in monounsaturated fats, polyphenols, and antioxidants to reduce inflammation

Red pepper flakes: Contains capsaicin in red pepper flakes that may increase your metabolism and stimulates digestive fluids
