These creme filled sandwich cookies are the perfect nourishing version of a store-bought classic! This recipe is so tasty, and honestly way more simple than I thought.

I was SO excited when I made and tried these because it was so decadent and a satisfying texture with the crunchy cookie and the creamy center. I naturally made these orange with pumpkin puree (you can omit if you do not want a Halloween treat) and the grass-fed butter is already a deeper yellow.

Ingredients and Benefits:

Almond flour: Use super-fine and I find it better to weigh out, however that is not necessary. It is higher in protein, fiber, and healthy fats

Cacao powder: Rich in flavonoids and minerals for anti-inflammatory benefits. You can substitute with cocoa powder if needed. I buy mine from Thrive Market for the best price and size!

Maple syrup: An unrefined source of sugar that is rich in minerals and some antioxidants

Grass-fed butter: Rich in vitamin k2 and A, CLA, beta-carotene, and health fats for digestion, hormones, and skin health

Date sugar: A natural sweetener that contains fiber, minerals, and antioxidants

Pumpkin puree:  High in fiber, prebiotics, antioxidants, vitamins A and C, carotenoids, zinc, and potassium

Salt: Brings out the chocolate flavor

Vanilla: Gives a delicious vanilla creme flavor

Instructions

  1. Preheat oven to 350 degrees Fahrenheit
  2. Mix cookie ingredients and you should be able to the dough together to shape
  3. Shape into individual rounds
  4. Bake for 10 minutes
  5. While cookies are cooling, use a hand mixer to whip together the frosting
  6. Add frosting and spread onto half of the cookie rounds
  7. Use the other half of the rounds to top
  8. Enjoy and watch a Halloween movie!!
