I did use sourdough discard, so if you have a sourdough starter and have extra discard, then this is perfect! But if you’re not, that’s totally cool! Just replace with Greek yogurt. I like to let mine sit overnight for the dough to ferment, however, it does not have to and it can be ready immediately.

Ingredients and Benefits:

Einkorn flour: Contains low levels, free of glyphosate, higher in protein, vitamins, minerals, and fiber

Greek yogurt: I purchase pasture-raised and grass-fed when I can for higher levels of omega 3s. Greek yogurt is high in protein, probiotics, and calcium

Sourdough discard: Contains lactic acid to predigest the starch in grains, lowers the glycemic index, and helps the body absorb nutrients better

Grass-fed butter: Rich in vitamin k2 and A, CLA, beta-carotene, and health fats for digestion, hormones, and skin health

Coconut sugar: An unrefined sugar with a lower glycemic index that retains more nutrients and inulin. Inulin is a prebiotic fiber that can help stabilize blood sugar

Ceylon cinnamon: Packed with antioxidants, benefits the metabolism, and was shown to improve blood sugar levels

Instructions

  1. Mix together dough ingredients and use immediately, or put in fridge for a bit to let sourdough magic happen
  2. Preheat oven to 350 degrees Fahrenheit
  3. Roll dough out into rectangle
  4. Whisk filling
  5. Spread filling on dough
  6. Slowly roll dough starting from one of the shorter rectangular sides until the dough is in a cylinder shape
  7. Cut into desired size
  8. Place into prepared pan and bake for 35 minutes
  9. While the cinnamon rolls are baking or cooling, cream topping ingredients together
  10. Top the cinnamon rolls and enjoy the deliciousness
