When I visited Greece, I was obsessed with the baklava. I loved the yummy flavors and texture and wanted to recreate it, but in a very simple way. This combination of nuts and a syrupy honey is just so delicious and reminiscent of real baklava, just made into a shortbread bar! And of course, it is made using wholefood ingredients and only sweetened with honey <3

Ingredients and Benefits:

Almond flour:  Higher in protein, fiber, vitamin, healthy fats, and is lower glycemic

Coconut flour: High in fiber, containing both soluble and insoluble. It is also higher in protein and contains 8 essential amino acids

Grass-fed butter: Rich in vitamin k2 and A, CLA, beta-carotene, and health fats for digestion, hormones, and skin health.

Ceylon cinnamon: Rich in antioxidants to lower free radicals, helps balance blood sugar, and has antimicrobial benefits

Pistachios: Rich in fiber, antioxidants, healthy fats, and are a source of melatonin

Pecans: Rich in calcium, magnesium, potassium, fiber, and vitamins for brain function

Honey: An unrefined sugar rich in antioxidants, flavonoids, and gut-healthy properties

Instructions

  1. Preheat oven to 325 degrees Fahrenheit
  2. Combine base ingredients and press into 8x8
  3. Bake for 15 minutes
  4. Combine nut topping and spread onto base
  5. Bake for 18 minutes
  6. Bring honey mixture to a boil and reduce to simmer for 5 minutes. pour on top of it all once out of oven
  7. Let cool to set for at least an hour
