This recipe is so tasty, nourishing, and satisfying! I was inspired by a version of pistachio pie I saw on “thathealthjunkie” instagram. This is the perfect summer treat, especially those that love pistachio gelato! Pistachios are a good source of melatonin, so these are great for sleep too.

Ingredients and Benefits:

Walnuts: Rich in ALA, omega-3s, and polyphenols that reduce inflammation

Tahini:  Rich in B vitamins, healthy fats, and minerals to support hormones, skin health, and blood pressure

Cacao powder: Rich in flavonoids and minerals for anti-inflammatory benefits. You can substitute with cocoa powder if needed. I buy mine from Thrive Market for the best price and size!

Ceylon cinnamon: Rich in antioxidants and has been shown to improve blood sugar

Pistachios: Rich in fiber, antioxidants, healthy fats, and are a source of melatonin

Greek yogurt: I purchase pasture-raised and grass-fed when I can for higher levels of omega 3s. Greek yogurt is high in protein, probiotics, and calcium

Date syrup: Contains fiber, minerals, and antioxidants

Chocolate: I use Hu Chocolate for an unrefined sugar and healthy chocolate option

  1. In a food processor, blend the base ingredients and press into a lined 8x8 pan
  2. Process the filling and spread on the base
  3. Melt the chocolate and tahini and pour on top of the base
  4. Freeze for a few hours and slice
