Fudgy Chickpea Blondies

These chickpea blondies are a healthy, gooey, and fudgy sweet treat that you will be obsessed with. They are also so easy to make, and I promise, no one will taste the chickpeas.

You seriously will not believe how delicious these blondies are, and they are made with healthy and straight-forward ingredients! Trust me, I was skeptical when I saw the chickpea blondie trend, but they are unreal. To make, just put all the ingredients in a blender or food processor and bake, the only tedious part is rinsing the chickpeas, but it is worth it!

Ingredients and Benefits:

Chickpeas: Rich in fiber, minerals, and protein to satiate you and support digestion. It is important to rinse the chickpeas well and pinch the skins off to get rid of the taste.

Cashew butter: Rich in magnesium, monounsaturated fats, and contains some essential aminos acids to support bone and metabolism health. You can substitute with any nut butter, but cashew has the most neutral taste.

Almond flour: Contains healthy fats, vitamins, and fiber to help digestion and reduce the glycemic load.

Date syrup: A natural sugar source containing minerals, antioxidants, and vitamins. You can substitute with maple syrup or honey.

Vanilla extract: Add a delicious flavor to compliment the blondies.

Salt: Balances the flavors

Baking powder: Gives lift.

Chocolate chips: I use Hu Chocolate chips since they are made with unrefined sugar.

  1. Preheat oven to 350 degrees Fahrenheit
  2. Rinse the chickpeas and pinch the skins off. It’s extra but worth it!! Try rubbing them together or in a towel
  3. Add all the ingredients except the chocolate to a food processor and process until smooth
  4. Mix in the the chocolate
  5. Pour into prepared 8x8 pan and bake for 20 minutes
  6. Let cool for 30 minutes to set or longer and enjoy!

Note

If you want them sweeter, add 1/3-1/2 cup date syrup
