This roasted cauliflower with an tahini herb sauce is absolutely stunning, creamy, and flavorful! It is low-effort, but sure to impress.

Ingredients
  • 1 whole cauliflower, stem removed
  • 1 tbsp olive oil
  • 1 tsp za'atar
  • 1/4 tsp turmeric
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • Sauce
  • 1/3 cup tahini
  • 1/3 cup cold water
  • 1 tbsp pasture-raised Greek yogurt
  • 2 tbsp garlic, minced
  • 1/4 cup mint, chopped
  • 1/3 cup parsley, chopped
Instructions
  1. Preheat the oven to 425
  2. Remove stem from cauliflower. Add oil and season
  3. Roast for 1 hour or until tender. Let rest for 5 minutes
  4. While the cauliflower is cooling, whisk together sauce ingredients
  5. Pour on the cauliflower and enjoy!
