Sugar-Free Pickled Red Onions

Pickled red onions are such a lovely addition to meals, they elevate a meal with a bright pop of flavor and are a vibrant pink I love adding them to my meals, but don’t love added sugar. So I decided to start making them from home so they contain wholesome ingredients and it is cheaper!

I have to be honest with you though.....boiling the apple cider vinegar makes your house quite stinky. I warn people before I make them or plan on doing it when no one is home. I swear it is so worth it though and making a large batch stores well in the fridge!

Ingredients and Benefits

Red onion: Rich in antioxidants, anthocyanins, fiber, vitamins, and quercetin for heart health, metabolism benefits, and anti-inflammatory effects

Apple cider vinegar: Good for gut health and blood sugar regulation by containing digestive enzymes, acetic acid, prebiotics, and probiotics

Garlic and herbs: Optional, but adds flavor, antioxidants, phytochemicals, and vitamins

Description

These sugar-free pickled red onions are a fridge staple. They are so easy to make, cheaper, healthier, have a pretty pink color, and of course is the perfect tasty condiment.

Ingredients
  • 2 red onions, thinly sliced
  • 1 cup apple cider vinegar
  • 1 tsp salt
  • oregano, rosemary, garlic (optional)
  • water to cover
Instructions
  1. Blanch onions in boiling water for 1 minute
  2. Drain and return to pot with vinegar and salt. Add water to cover and simmer for 1 minute
  3. Pour into glass jar with garlic and herbs if using
  4. Cool and let sit for a few hours in marinate and get pigmented
  5. Store in fridge
