Spinach and Feta Stuffed Salmon

This Mediterranean twist on salmon is so delicious and feels very impressive, even though it does not require much work! It is stuffed with feta, spinach, garlic, green onion, and dill. Yum!

Elevate your dinner with a low effort, delicious, and healthy Mediterranean stuffed salmon dinner!

Ingredients
  • 1 lb wild-caught salmon (the thicker the better but if not you can stuff it on top like I did)
  • 4 garlic cloves (minced)
  • 1/2 container spinach
  • 3/4 cup feta
  • 2 green onions (chopped)
  • 2 tbsp fresh dill (chopped)
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • oil for salmon
Instructions
  1. Preheat oven to 420 degrees Fahrenheit
  2. In a baking dish or on a sheet pan, add the salmon and slice halfway into the side of it or the top depending on the thickness
  3. Lightly oil salmon and season with paprika, salt, pepper
  4. In a pan over medium heat, add oil if needed, garlic, the green onions, and dill
  5. Add the spinach and stir until it wilts down
  6. Remove from heat, crumble in the feta, and combine
  7. Stuff the salmon with this filling and bake for 15-17 minutes
