Rainbow Asian Steak Salad

This veg-forward Asian steak salad takes 30 minutes or less to make and is full of flavor and a crunchy, satisfying texture. It is a nourishing meal, but still feels light. This is also perfect for any season! Great for summers, to nourish your body before and after holidays/vacations, and really just anytime you want a crunchy salad because this is definitely not a boring salad.

Ingredients and Benefits:

Garlic: Has antibiotic and anti-inflammatory properties. Tip: let garlic sit out for 10-15 minutes after mincing so the enzyme allicin is activated and the benefits are retained!

Ginger: Great for gut health, anti-inflammatory, and may have neuroprotective benefits

Coconut aminos: Contains 17 amino acids, probiotics, and antioxidants. It tastes similar to soy sauce, but has a little more sweetness

Rice vinegar: Good for blood sugar control and contains antioxidants to boost immune system

Sesame oil: Contains vitamins, antioxidants, and provides the nutty signature Asian flavor

Extra-virgin olive oil: Rich in monounsaturated fats, polyphenols, and antioxidants to reduce inflammation

Green cabbage: Rich in fiber, antioxidants, folate, and vitamin c for healthy digestion and disease prevention

Bell pepper: Rich in vitamins and fiber to protect against disease

Rainbow carrots: Different colors contain different phytonutrients such as anthocyanins for heart health, xanthophylls for eye health, and lycopene for cancer fighting properties

Cilantro: Rich in quercetin, tocopherols, vitamins, and antioxidants for protection against oxidative stress

This rainbow steak salad is absolutely gorgeous and full of colorful nutrients! When you know your body just NEEDS vegetables and high quality protein, but also want flavor, then this salad is a must.

Ingredients
    Sauce/marinade
  • 2 large garlic cloves, minced
  • 2 green onions, chopped
  • grated ginger, about an inch
  • 1/4 cup coconut aminos
  • 2 tbsp rice vinegar
  • 1 tbsp olive oil
  • 1 tbsp sesame oil
  • salt and pepper
  • Salad
  • 1/2 head green cabbage, chopped
  • 1 bell pepper, sliced
  • 1/2 bag rainbow carrots, sliced
  • 1/4 cup cilantro, chopped
  • 1 lb cooked pasture-raised steak of choice, I used flank and sliced it
Instructions
  1. Whisk together the dressing
  2. In an airtight container, add the steak and pour 1/2 to marinade the steak for a few hours if you can, at least 30 minutes
  3. Cook steak to your liking
  4. In a large bowl, mix the salad ingredients
  5. Add the steak and top with the rest of the dressing
