Perfect Pink Beet Tzatziki

I am obsessed with tzatziki, like I could just eat in by the spoonful. It is so fresh, flavorful, and a great way to get protein in. You can use it as a vegetable dip, pita dip, thin it out as a dressing, put it on gyros, or top it on my Mediterranean stuffed bell pepper recipe!

Ingredients and Benefits:

Beets: Rich in nitric oxide to increase blood flow, folate to keep cells healthy, and fiber for a healthy digestive system

Ingredients
  • 3 cooked beets (grated, I use Love Beets already cooked)
  • 1 cucumber (grated)
  • 1 cup Greek yogurt
  • 1 tbsp fresh dill (chopped)
  • 1 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 2 garlic cloves (minced)
Instructions
  1. In a small bowl, add the Greek yogurt, beets, cucumber, garlic, and lemon juice. Mix
  2. Top with olive oil
