Miso Lettuce Wraps

These lettuce wraps are incredibly easy to make! This would be great for a light meal prep or quick dinner when you are busy but still want to nourish yourself with something yummy.

It is also very customizable. In this recipe, I used ground turkey, but I usually use ground beef since it is more available to me. You can switch up the vegetables you use too.

Ingredients and Benefits:

Pasture-raised ground meat: Pasture-raised meat provides more vitamins, omega-3s, and overall have a better nutritional profile. Onion: Rich in vitamin C, which supports collagen production, immune health, and iron absorption. Contains quercetin, an antioxidant that has anti-inflammatory effects.

Bell pepper: Rich in vitamins and fiber to protect against disease.

Garlic: Has antibiotic and anti-inflammatory properties. Tip: let garlic sit out for 10-15 minutes after mincing so the enzyme allicin is activated and the benefits are retained!

Mushrooms: I used lion's mane that I got locally. Lion's mane may help improve brain function and lower blood sugar.

Coconut aminos: Contains 17 amino acids, probiotics, and antioxidants. It tastes similar to soy sauce, but has a little more sweetness.

Miso paste: Rich in probiotics to support gut health and improve digestion.

Sesame oil: Contains vitamins, antioxidants, and provides the nutty signature Asian flavor.

Rice wine vinegar: Contains acetic acid that has antimicrobial properties.

Lettuce: It is important to purchase a sturdy lettuce such as bib, butter, or romaine.

Description

Healthy miso lettuce wraps for an Asian-inspired meal! You will love this refreshing and clean eating recipe.

Filling ingredients
  • 1 lb pasture-raised ground meat (You can use beef, chicken, turkey, or pork)
  • 1 onion (diced)
  • 1 bell pepper (diced)
  • 4 garlic cloves (minced)
  • 1 package mushrooms (diced)
  • 1 head sturdy lettuce
  • Sauce ingredients:
  • 1/4 cup coconut aminos
  • 2 tbsp miso paste
  • 1 tbsp sesame oil
  • 1 tbsp rice wine vinegar
Instructions
  1. In a pan over medium heat, add the onion and saute until soft.
  2. Add the garlic and the rest of the vegetables. Cook for 2 minutes.
  3. Add the ground meat and cook for 7 minutes.
  4. Add the sauce ingredients and combine.
  5. Lower heat and let simmer for 2-5 minutes.
  6. Add the mixture to your lettuce and enjoy!
Note

I use a Caraway pan, which does not need oil, so if you do then add that at the beginning. I recommend avocado oil spray.
