Ingredients and Benefits:

Description

This recipe is simple to throw together and a great way to diversify your diet! The creamy dressing pairs well with the variety of crunchy textures.

Salad ingredients
  • 1 bunch kale, chopped
  • 1 bunch radishes, thinly sliced
  • 1 green apple, diced
  • 3 scallions, chopped
  • 1 avocado, diced
  • 3 cups cooked quinoa (I use sprouted for easier digestion)
  • 1 lb chicken, chopped (I use pasture-raised)
  • Dressing ingredients
  • 2 tbsp extra virgin olive oil
  • 1/4 cup tahini
  • 2 tbsp coconut aminos
  • 1 tsp pickled red onion juce (optional, try my sugar free recipe!)
  • 1/2 juice of lemon
Instructions
  1. Add dressing ingredients to a large bowl and mix.
  2. Add the chopped kale and massage into dressing for 5 minutes.
  3. Add the rest of the ingredients, except the avocado, and toss.
  4. Top with avocado and enjoy!
