Jack-O-Lantern Stuffed Peppers

Is there anything more cute than these peppers? NO! Definitely give these a try this October, this recipe is so full of flavor, protein, fiber, and every bite is so perfect. The crunch of the bell pepper with the spiced ground beef and tzatziki is insanely delicious and is one of my favorite dinners.

Ingredients and Benefits:

Bell peppers: Rich in vitamins and fiber to protect against disease. Try buying different colors for different nutrients!

Pasture-raised ground meat: Pasture-raised meat provides more vitamins, omega-3s, and overall have a better nutritional profile. Red onion: Rich in quercetin and phytonutrients to support heart health.

Garlic: Has antibiotic and anti-inflammatory properties. Tip: let garlic sit out for 10-15 minutes after mincing so the enzyme allicin is activated and the benefits are retained!

Tzatziki: Rich in protein, calcium, health fats, and fiber. This is a must!

Try this Halloween twist on my delicious Mediterranean stuffed pepper recipe! It is so fun to make, high in protein, and absolutely delicious.

Ingredients
  • 4 bell peppers
  • 1 lb ground meat
  • 1 small red onion (diced)
  • 4 garlic cloves (minced)
  • 1/2 tsp za'atar or oregano
  • 1/4 tsp crushed red pepper
  • 1/4 tsp turmeric
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions
  1. Preheat oven to 375 degrees Fahrenheit
  2. "Carve" out a Jack-O-lantern face into your peppers
  3. In a pan over medium heat, sauté the onion and garlic for 2-3 minutes
  4. Add the meat and seasoning, brown but don't fully cook
  5. In a baking dish, add the peppers. Then, fill with the meat
  6. Bake for 25 minutes
  7. Top with tzatziki and enjoy!
