If you love carrot cake and nutrient dense sweet treats, then this recipe is definitely for you!!! It is absolutely so delicious and has an amazing texture, and of course they are super simple to make. Just blend these delicious hormone supporting ingredients together and freeze!

Ingredients and Benefits:

Walnuts: Rich in ALA, omega-3s, polyphenols, vitamins, and antioxidants for reduced inflammation, improved brain function, and a healthy gut

Pecans: Rich in calcium, magnesium, potassium, fiber, and vitamins for brain function

Dates: Rich in vitamins, antioxidants, copper, magnesium, selenium, and have a low glycemic index

Ceylon cinnamon: Rich in antioxidants to lower free radicals, helps balance blood sugar, and has antimicrobial benefits

These no bake carrot cake bars are incredible! You will be obsessed with how simple, nutritious, and satisfying to that carrot cake taste they are.

Ingredients
    Base
  • 1/2 cup walnuts, or if you’re like me and out of them then any nut or seed. I mixed chia and flax
  • 1/2 cup pecans
  • 8 dates, pitted
  • 1/4 tsp salt
  • 3/4 cup grated carrots, moisture squeezed out
  • 1/2 tsp Ceylon cinnamon
  • 1/2 tsp ginger
  • Frosting
  • 1/2 cup pasture-raised Greek yogurt
  • 2 tbsp cream cheese (softened)
Instructions
  1. Blend the base ingredients together and press into prepared 8x8 pan
  2. Whisk together the topping ingredients
  3. Spread on the base
  4. Freeze for an hour or longer to set
