High Protein Pumpkin French Toast Sticks

I am so excited to share this healthier pumpkin French toast recipe, even better in stick form! I will be honest, I used to DOWN the frozen French toast sticks as a kid, so I was pleasantly surprised by how similar these tasted.

This recipe is super simple to make, higher in protein due to the secret ingredient....blended cottage cheese! I added pumpkin too because we must take advantage of pumpkin season and it's benefits. You cannot taste the pumpkin though, so if you are looking for that, then add pumpkin spice.

These sticks are cinnamony and crispy perfection, and amazing drenched in maple syrup. Definitely give this recipe a try! Your body will thank you for giving it a more nourishing version <3

Ingredients and Benefits:

Bread: I would recommend sourdough for the gut-health benefits and lower glycemic index or a grain-free bread using healthier ingredients such as almond flour. My biggest tip is to avoid any with seed/vegetable oils, preservatives, and added sugars, but use whatever you want!

Pasture-raised eggs: Rich in vitamins A, D, E, K, omega-3s, carotenoids, and is more sustainable for the planet

Pasture-raised cottage cheese: I use the brand Good Culture since it pasture-raised. The cottage cheese is higher in protein, calcium, b vitamins, and probiotics

Pumpkin puree:  High in fiber, prebiotics, antioxidants, vitamins A and C, carotenoids, zinc, and potassium

Ceylon cinnamon: Packed with antioxidants, benefits the metabolism, and was shown to improve blood sugar levels

A fall festive high protein spin on a classic sweet breakfast! These French toast sticks are insanely delicious, and you won't believe the secret ingredient.

Ingredients
  • 6 slices bread, cut into strips
  • 2 pasture-raised eggs
  • 3 tbsp pasture-raised cottage cheese
  • 1/4 cup pumpkin puree
  • 1/2 tsp vanilla
  • 1 tsp Ceylon cinnamon
  • Pinch salt
Instructions
  1. Heat pan over medium.
  2. Blend eggs, cottage cheese, pumpkin, vanilla, cinnamon, salt in a mini processor
  3. Pour mixture into bowl, or do what I did and dip bread in the processor bowl :)
  4. Dip sticks one by one, soaking for 1 minute each side
  5. Cook 3-5 minutes each side or until crispy
  6. Serve with your favorite toppings, I did maple syrup ofc!
