High Protein Cottage Cheese Mac n Cheese

Mac n Cheese is an American classic and something that can be made much healthier and simpler by using high quality and mindful ingredients. When I first tried this recipe, I was so impressed at how true to the "real thing" it tasted.

If you are wanting to add more protein to your diet, then definitely try this recipe. It packs in around 30 grams of protein per serving and could not be more simple to make. I swear you will be obsessed!

Pasture-raised cottage cheese: I use the brand Good Culture since it pasture-raised. The cottage cheese is higher in protein, calcium, b vitamins, and probiotics

Pasture-raised cheddar cheese: Rich in omega-3s, conjugated linoleic acid, and vitamins to reduce inflammation, provide protein, and may improve metabolic health

Ingredients
  • 16 oz pasta of choice, dry (I used jovialfoods einkorn from thrivemarket)
  • 1 cup pasture-raised cottage cheese
  • 1 cup grass-fed cheddar cheese
  • water, milk, or bone broth to thin if needed
  • I added in minced garlic, paprika, and black pepper
Instructions
  1. Cook noodles according to package
  2. Blend the rest of the ingredients
  3. Add to pasta and combine until warm
  4. Enjoy!! I like to add vegetables to mine
