Healthy and Cozy Pumpkin Chili

Adding pumpkin puree to all sorts of different recipes is one of my favorites, and it works so well in this chili! I love how it thickens the chili, adds fiber, and gives it a fall flare without a noticeable pumpkin flavor.

It is done in an hour maximum and is just the perfect cozy meal to warm you up. I think pumpkin chili is my favorite type, and from what I've heard from others, they agree! Definitely make this one, it is super simple, can stay warm on the stove for a while, and reheats very well.

Ingredients and Benefits:

Onion: Rich in vitamin C, which supports collagen production, immune health, and iron absorption. Contains quercetin, an antioxidant that has anti-inflammatory effects

Garlic: Has antibiotic and anti-inflammatory properties. Tip: let garlic sit out for 10-15 minutes after mincing so the enzyme allicin is activated and the benefits are retained!

Pumpkin puree:  High in fiber, prebiotics, antioxidants, vitamins A and C, carotenoids, zinc, and potassium

Bell pepper: Rich in vitamins, carotenoids, fiber to protect against disease and reduce inflammation

Tomatoes: Rich in vitamins, fiber, and lycopene to fight against inflammation and disease

Black beans: Rich in fiber, plant protein, folate, magnesium, and calcium for satiety, blood sugar control, healthy bones, and healthy digestion

Use up extra pumpkin puree in this delicious, high protein, and super simple chili recipe! It is honestly perfect for any time though because of how delicious it is.

Ingredients
  • 1 lb ground pasture-raised meat
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 bell peppers, diced
  • 1 can 1 fire roasted diced tomatoes or 1 cup fresh diced
  • 1 can black beans
  • 1 cup pumpkin puree
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1/2 tbsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1 1/2 cup bone broth
Instructions
  1. Heat pot over medium, add oil if needed*, add the peppers, onions, and garlic and cook for a few minutes until they become fragrant and softened
  2. Add the ground beef, salt, and spices
  3. Add in the, tomatoes, beans, pumpkin puree and bone broth. Stir until combined
  4. Bring to a boil and then reduce the heat to a simmer. Simmer the chili for 30-45 minutes
Note

*I use Caraway cookware, which does not need much or any oil, so add as much as you'd like due to preference
