This recipe does not require any baking, but need to set on the counter overnight. It is important to let them dry out for around 2 days if you want to roast them! If they are too "wet" they will not hold as well.

Honey: I use a mixture of honey and maple syrup for a neutral taste, but using either one is tasty! Both are an unrefined sugar that retains more nutrients.
Tapioca starch: Used to dry out the marshmallows. I use tapioca starch because it is lower in FODMAPS.
