I pretty much love anything with greek yogurt, so this recipe is perfect! It is so simple, cozy, full of flavor, rich in antioxidants and protein, and just an amazing way to elevate your meals

Capers: Rich in quercetin, copper, and vitamins to support metabolism

Parsley: Rich in antioxidants and vitamins for skin health and serves as a natural diuretic

Garlic: Has antibiotic and anti-inflammatory properties. Tip: let garlic sit out for 10-15 minutes after mincing so the enzyme allicin is activated and the benefits are retained!

Extra-virgin olive oil: Rich in monounsaturated fats, polyphenols, and antioxidants to reduce inflammation

These caper patties with a yogurt slaw are absolutely divine! They are simple, nutrient dense, vibrant, and packed for of flavor for dinner.

Ingredients
  • 1 lb pasture-raised ground meat of choice
  • 4 tbsp capers
  • 2 garlic cloves (minced)
  • 1 bunch parsley (finely chopped)
  • 1/2 lemon juice
  • 1/4 cup olive oil
  • 1/4 tsp salt
  • 1 head purple cabbage, grated
  • 2 small beets, grated
  • Greek yogurt for spreading
Instructions
  1. Mix together the parsley, garlic, lemon juice, olive oil, and salt
  2. Add the ground meat to a bowl and combine with 1/2 of the sauce
  3. Form into patties and refrigerate for 15 minutes
  4. Cook patties in skillet over medium heat for 8-10 minutes
  5. Dollop Greek yogurt on plate with extra lemon juice
  6. Top with cabbage and beet
  7. Top with patties and the rest of the sauce
