We rode through the countryside on the horses, sampled raw local honey, had lunch at the local agriturismo, then went into the historic town center to explore, and had the amazing gelato!

So refreshing and a unique flavor combo that is just *chef’s kiss* because if you’re like me, you know that tzatziki is just the perfect addition

Marinade:
-1 lb chicken breast or thighs, diced (if grilling then keep whole and slice after)
-1/2 cup soy sauce (sub coconut aminos)
-2 tsp ginger powder (add grated if you’d like)
-1 tsp olive oil
-2 tbsp chopped dill
-1/4 tsp pepper

Tzatziki:
-1 cucumber, grated and squeezed 
-2 clove garlic, minced
-1/4 cup dill, minced
-1/2 cup plain greek yogurt
-Squeeze of fresh lemon

Lettuce for boats and sliced cucumbers

Method:
-marinade chicken for at least 30 minutes or overnight 
-when ready to cook, combine tzatziki ingredients in a bowl and set aside
-heat grill or pan on stovetop and cook chicken 5-7 minutes on each side, until cooked through
-form boats starting with lettuce, cucumbers, chicken, tzatziki and enjoy!
