salads with grilled chicken are absolutely one of my favorite meals! love the textures, freshness, and yummy flavors

This lemon basil dressing is so flavorful, especially with the pickled red onions, and just perfect for a simple summer salad. Another bonus, it’s also like an internal sunscreen since it is rich in antioxidants, lycopene, omega-3s, and more

Salad:
-your choice of chopped lettuce
-1/2 cup blackberry 
-1 cucumber, diced
-1/2 cup grape tomatoes, diced
-1 lb cooked chicken breast, diced

Dressing:
-1/2 cup basil
-2 garlic cloves
-2 spoonfuls pickled red onions (can sub 1/4 cup red onion)
-1/4 cup olive oil
-1/4 cup balsamic vinegar 
-squeeze lemon
-dash salt and crushed red pepper

Method:
-combine salad ingredients into a large bowl
-in a mini processor, add the dressing ingredients and blitz briefly until smooth
-pour over salad and toss to combine 
-that’s all <3 serve by itself, with sourdough, foccacia

Chocolate banana date bark 🍌🍫 date bark but Chocolate banana date bark 🍌🍫

date bark but when you’re also craving something fresh and fruity

It’s creamy, chocolatey, a bit caramely, and of course, banana(ey?) idk it’s just yummy!! I used cashew butter, but sub any of your favorite (tahini, hazelnut, etc)

Ingredients:
can eyeball (for 2)
-1 bar chocolate, I used @ooblisweetproteins salty dark (use my link and code “OLIVIA20”)
-1 tsp coconut oil
-8 medjool dates, pitted
-1/2-1 banana, sliced
-2 tbsp cashew butter

Method:
-line a loaf tin or glass container with parchment paper
-melt half the chocolate and coconut oil and use for the bottom layer
-place banana slices on top of chocolate
-place dates on top, pressed out
-spread cashew butter on top of dates
-melt remaining chocolate and oil, pour on top as the final layer
-freeze for 30 minutes to an hour to set, don’t let freeze otherwise the banana will get mushy when thawed😝

Strawberry rhubarb crisp 🍓🍨 gf, rsf, and ho Strawberry rhubarb crisp 🍓🍨

gf, rsf, and hormone supportive!! It’s rich in fiber, antioxidants, vitamins, and minerals 

This is the perfect low sugar and summery dessert, so delicious especially with some freshly whipped cream or vanilla ice cream xx

Ingredients:
-2 cups chopped rhubarb
-2 cups chopped strawberries
-1 tbsp tapioca starch 
-1 tsp vanilla extract
-optional addition of honey or maple syrup, I like it without :)
Crisp:
-1 cup rolled oats, i used @onedegreeorganics sprouted
-1/2 cup almond flour
-1/4 cup melted coconut oil 
-1 heaping tbsp honey (add more if you like it sweeter)
-1/2 tsp cinnamon
-Pinch of salt

Method:
-preheat the oven to 350 degrees Fahrenheit and prepare an 8x8 dish
-combine the chopped rhubarb, strawberries, tapioca starch, cinnamon, and vanilla in the dish 
-in a bowl, combine the crisp ingredients and mix together
-spread over the the strawberry rhubarb mixture and evenly coat 
-bake for 45 minutes until golden brown 
-enjoy with whipped cream, vanilla ice cream, or Greek yogurt!!

Mango chicken curry🥭🍚 A tropical twist on c Mango chicken curry🥭🍚

A tropical twist on curry with mango that provides the perfect balance of sweetness to the spices 

This recipe is so nutrient dense, full of delicious flavors, and simple to make yet feels a bit fancy

Ingredients:
-1 lb chicken (breasts or thighs), diced
-1 onion, diced
-4 garlic cloves, minced
-1 inch fresh ginger, grated (or use 1/2 tbsp powdered)
-1 tsp cumin
-1/2 tsp salt
-1/4 tsp pepper 
-2 tbsp curry powder (or paste)
-flesh of 1 mango (or thaw 1 cup frozen mango cubes)
-15 oz can coconut milk
-lime juice and cilantro to top

Method:
-in a mini food processor, blend mango and coconut milk, set aside
-in a pan* over medium heat, add oil
-add onion and garlic, sauté for 3 minutes
-add spices and mix together 
-pour mango coconut milk into skillet and bring to a simmer
-add chicken and mix together to submerge the pieces
-cover the skillet and simmer on medium-low for 12-15 minutes 
-once fully cooked and sauce is thickened, turn off heat and squeeze in lime juice
-top with cilantro and serve with rice and your favorite veggie!

*I used my @caraway_home ceramic pan that does not need oil, add some if you’d like as instructed :)
